About the role: Chef and cook
Chefs and cooks prepare the food served in hotels, restaurants, cafés, catering companies, hospitals and staff canteens. Kitchen brigades include commis, demi chefs and chefs de partie, sous chefs, executive chefs, pastry chefs and bakers, along with kitchen stewards.
The UAE's hospitality scene is large and very international: hotels and resorts, restaurant groups, cloud kitchens, airline and event catering, and contract catering for schools, offices and industrial sites all recruit regularly. Cuisine specialisms, such as Arabic, Indian, Asian, Italian or pastry, are frequently named in listings, and new hotel and restaurant openings create waves of hiring.
Employers expect proven experience in a similar kitchen, knowledge of food safety and HACCP, and the ability to work under pressure during busy services. Hotels and large operators often provide staff accommodation, transport or meals; check the listing and offer for the full package, working hours and days off.
Main responsibilities
- Prepare dishes to recipe and presentation standards
- Run a section during service
- Receive, store and rotate ingredients
- Apply food safety and hygiene rules
- Train junior cooks and contribute to menus
Skills employers look for
- Experience in a comparable kitchen or cuisine
- Knowledge of HACCP and food safety
- Speed and consistency under pressure
- Cost and waste control for senior roles
- Teamwork in a multicultural brigade
Food safety in the UAE
Food establishments must follow the food safety rules of the local municipality or food authority, which require trained food handlers and supervisors. A recognised food hygiene certificate is an advantage, and employers often arrange the specific local training.
